Providence Health & Services Cook in Centralia, Washington

Providence is calling a Cook (0.5 FTE, 20 hours per week Variable) to work in the Dietary/Food and Nutrition Services at Providence Centralia Hospital in Centralia, WA

The Cook will prepare and serve the hot food portion of patient meals, cafeteria food, special functions, and catering to ensure the smooth functioning of the kitchen.

In this position you will:

  • Accurately follows therapeutic diet prescriptions and texture orders:

  • Prepare and serve hot or cold food items according to the diet order

  • Prepare and serve altered texture consistencies to meet patient requirement

  • Follow standardized recipe and serving portion size per order

  • Prepare and serves hot foods that are flavorful, appealing, and contain nutrient value for patient tray service, cafeteria, and catering:

  • Prepare entrees and other hot food items to ensure quality of texture, color, and general appearance

  • Follow cooking method closely to ensure retention of nutrients and flavorful foods

  • Use creativity in food production and two color garnishing is present

  • Supervise the kitchen staff on evenings, weekends, and holidays or when the Nutrition Services Manager and Supervisor are absent:

  • Adjust the work schedule or calls in additional staff as needed

  • Resolve minor personnel issues and problem solving

  • Summarize important details and necessary reports to the Supervisor

  • Assume the responsibility for safety and sanitation during emergencies and disasters

  • Comply with food services sanitation and cleanliness requirements:

  • Follow safe food handling principles of temperature control, cleanliness, and non-contamination of food using accepted HACCP protocol

  • Control contamination of food by proper hand washing and glove use

  • Sanitize and cleans the equipment assigned the cook to include hoods, ovens, stoves, steamer, sinks, cooking counters, prep areas, mixers, refrigerators

  • Safety thaws foods, records cooking and serving temperatures, cooling and reheating temperatures using accepted HACCP protocol

  • Allocate time to assure completed daily work:

  • Prepare and serves foods on time

  • Organize cooking to meet serving time deadlines and ensure flavorful, tender product

  • Plan ahead for the meal requirements of the next few days

  • Practice good safety habits within Hospital and Nutritional Services Department:

  • Follow procedure for safe use of equipment to minimize injury and breakage of equipment

  • Inform supervisor of malfunctioning equipment, needed maintenance, and general safety concerns

  • Wipe up spills immediately or notifies housekeeping of potential hazards

  • Restock and clean area during and at the end of the shift:

  • Keep work area clean and tidy during shift

  • Leave work area clean for next shift and locks up area as needed

  • Ensure proper rotation, dating, and Par level of food and supplies

  • Place clean dishware in the assigned locations and ensure clean utensils for food preparation and cafeteria services

  • Participate in the orientation of new employees:

  • Convey knowledge in a concise, complete manner to new employees in an encouraging manner

  • Update the department manager and/or supervisor of the progress of the new employees

Qualifications:

Required qualifications for this position includes:

  • Food Handlers Permit within 14 days of hire

  • One (1) year of Experience in quantity food preparation and use of institutional equipment

Preferred qualifications for this position includes:

  • ServSafe Certificate obtained within 90 days of hire

  • Knowledge or training in special diets
